Creamy Brat Casserole

I don’t know about you, but Brats just scream summer time for me. Its not a typical Northern WI cookout without a grill full of brats and hot dogs. I have been trying to find new ways to incorporate brats into dinners, that aren’t just your basic brat on a bun.

Creamy Brat Casserole is a fun different way to eat brats. Who doesn’t love a noodle casserole? This threw together easily and tasted really great . Below I will have a quick step by step on how I threw this all together and I than at the bottom of this post I will have a recipe. Remember to pin to Pinterest and share to your Facebook page.

Here is what I did!

Start with cooking your brats. I chose to cook my brats in my cast iron so I could make my sauce from the drippings. You could use already cooked brats or cook them on the grill instead of inside, all works just as good.

While the brats are cooking, make sure you start on your noodles. Get those boiling while everything else cooks so they’re ready to add to the cream sauce later.

Once the brats are cooked, remove from pan and set aside to cool off enough to cut up. I just sliced mine into small chunks but I think next time I will cut them into half moons, a little smaller pieces that way.

Using the drippings / juices from the brats, you can add your milk, heavy whipping cream and Parmesan Cheese. Bring this to a small boil and reduce the heat to a simmer. If you have patients, it will thicken on its own, or you can make a roux with corn starch and cold water to thicken it up quicker.

Add your brats, onions and spinach in your thickened cream sauce.

Add your noodles into your cream sauce and mix everything together. Than top everything with some cheese. Honestly, its not a casserole without cheese on top.

You can leave your casserole to sit for a few minutes to melt the cheese or you could stick it in the oven at a low temperature for a little bit to melt the cheese and crisp it up if you choose.

Creamy Brat Casserole

Creamy Brat Casserole is a new way to incorporate brats into your dinner without the traditional brat on a bun.

Cook Time 20 minutes
Total Time 30 minutes

Ingredients

  • 3 Brats
  • 1/2 Onion
  • Handful of Spinach
  • 1/4 Pound Elbow Noodles
  • 1 Cup Milk
  • 1/2 Heavy Whip
  • 1/4 Shredded Parmesan Cheese
  • Pepper & Salt to taste
  • Mozzarella Cheese - Topping
  • ~~~~~~~~~~~
  • Optional:
  • 2 Tbsp Corn Starch
  • 2 Tbsp Cold Water

Instructions

  1. Cook your brats - can use a cast iron pan or your grill
  2. Bring your pot of noodles to a boil
  3. Once brats are cooked, remove from pan and allow to cool.
  4. Cut up onion and spinach, once brats are cooled cut those up as well.
  5. Add your heavy whipping cream, Parmesan and milk to your pan and bring to a light boil. Once boiling turn down heat to a simmer and let simmer for a few minutes.
  6. Sprinkle your salt and pepper to taste.
  7. If sauce does not thicken after sitting, can make a roux from your corn starch and cold water. Mix that into your sauce real well and add your brats, onions, spinach and noodles to the pan.
  8. Mix everything else together and top with Mozzarella Cheese.

Notes

If you are not a fan of spinach, you can certainly skip that step. You could add mushrooms to this also if you like mushrooms.
