I really enjoy a crockpot dinner when life gets busy. There are times when life seems slow but there are weeks when we are constantly on the go and not having time to make dinner, sometimes happens. That’s when I throw an easy but delicious crockpot dinner into the week. Baked Chicken and Rice is one of my favorites as well as this crockpot version.

About The Recipe
I actually found this recipe one day scrolling through Facebook. Per my usual though, I tweet everything and make it my own. I’ve made this a few times and every time I make it, Mark doesn’t think he will like it.. until he tries a bite.
Like I said above, life was busy and I wanted to make something in the crockpot. I had my younger sister for the weekend and she’s at that age where she can be picky, sometimes. I just knew she would love this though.
So if you have picky eaters at home, this is a really great recipe! It’s simple, very little ingredients and tastes delicious!!
What Do I Need To Make This?
- Chicken Breasts
- Diced Onions
- Garlic
- Salt & Pepper
- Chicken Broth
- Cream of Chicken Soup
- Frozen Corn – Thawed
- Block of Cheddar Cheese
- Rice – Cooked
- Crockpot
How Do I Start This?
The best part about crockpots.. they do the work for you. You just throw everything in and let it work it’s magic, while you work yours at your job! I’ll go into detail below including pictures on how to put this together.
Add your seasoned chicken breasts to the bottom of the crockpot. Toss in your diced onions, garlic and pour in the chicken broth and cream of chicken. Allow this to cook on low for 6-8 hours. The time will depend on how large your chicken breasts are. I had smaller ones and it could have been better if it only cooked for 6 instead of the full 8, due to being at work.




Final Steps
Now that you have gone and did something for the needed time, shred your chicken and add the remaining ingredients. If you haven’t already, thaw your corn to get ready to toss in. You can certainly use canned I just prefer frozen. Mix everything together and get ready to serve!!







How To Eat
There are a couple of ways you can eat this. I prefer it in a bowl with a spoon. You can throw it on a bun and make a sandwich out of it as well.
Again, this is really great for that picky eater. Even my sister ate 2 bowls of it after she at first wasn’t sure what she thought of it. She ended up loving it!!
I would imagine that this would also freeze really well if you had some leftovers that you didn’t think you would finish.

Crockpot Chicken & Rice

Crockpot Chicken & Rice is not your traditional dinner. Its cheesy and has corn. Great for a picky eater
Ingredients
- 4-5 Chicken Breasts - depending on size.
- 1/2 Cup Chicken Broth
- 10.5 Oz Cream of Chicken
- 1/2 Medium Onion - Diced
- 10 Oz Frozen Corn - Thawed
- 8 Oz Cheddar Cheese - Shredded
- 2 Cups Rice - Cooked
- Spoonful Minced Garlic
- Salt & Pepper to taste
Instructions
1. Place your seasoned chicken on the bottom of the crockpot.
2. Add diced onion, garlic cream of chicken soup and chicken broth.
3. Set crockpot on low for 6 hours, maybe more depending on how large the breasts are.
4. Once time is up, shred the chicken.
5. Add cooked rice, corn and cheese and stir until completely combined.
6. Serve up a delicious bowl!!
Notes
You can add more or less onion, depending on how much you like onion.
Also, you can use canned corn, I just prefer frozen.
