Pork and Broccoli slaw is of course another low carb dinner that you can throw together fairly quickly. The cutting of the veggies is probably what takes the longest, however the rest goes fairly quick.
You can make this in a cast iron skillet or on a flat top griddle if you have one, I have done both and I do have to say the flat top is much easier as there is more room, but the skillet works just as good.
Below I will go through a quick step by step on how I throw this together and at the bottom I will have the actual recipe. Remember to pin, print or share on facebook for a later date.
How Do I Cook This?
You will want to start with cutting up your vegetables, onion, pepper and mushrooms. Cut your onion into small pieces, peppers into thin slices and slice mushrooms into desired thickness.

Once your vegetables are cut up, you want to add them to a greased pan or flat top griddle. Cook them until they are a nice “golden” brown color and tender. Once they are finished, remove from the pan and set aside until after the pork chops are done.

I like to add a little salt and pepper to my veggies, but you can certainly leave that step out if you choose.

Now that you have removed your peppers, onion and mushrooms and put in a bowl on the side. You may need to add a little oil substance before you add your broccoli slaw, but now is the time to add that in. Cook that until tender and “wilted”.


Again, I seasoned my broccoli slaw with salt and pepper and a dash of turmeric. Once the broccoli slaw is cooked up, you can add that to your bowl of other veggies because now is where we cook up the pork chops.
Slice your pork chops into 1/4 inch pieces and season again with salt and pepper. Add pork chops to the oiled pan or flat top and cook until fully cooked. Once those are finished cooking, add everything back into the pan and mix together.




Now that you have returned everything back to the pan and have mixed it all together, add your soy sauce and chili paste (if you want) and mix it one last time and than serve it up on a plate!

This is such a fun recipe and again you wouldn’t know it was low carb if someone didn’t tell you. The broccoli slaw kind of turns into noodles once cooked, making them take on a lot of the flavor that you’re cooking with.

Pork and Broccoli Slaw

Pork and Broccoli slaw is a low carb recipe that tastes so good you wouldn't even know. The slaw takes on the flavor of everything else and tastes great.
Ingredients
- 1/2 Onion
- 5 mini peppers or 2 full size - sliced long ways
- 4 oz mushrooms
- 10 oz broccoli slaw
- 1 lb pork chops- sliced 1/4 thick
- 1/4 cup soy sauce
- 1 tsp chili paste
- salt and pepper to taste
Instructions
- Slice up your mushrooms, onion and peppers.
- Add peppers, mushrooms and onions to an oiled pan on medium heat. Cook until tender.
- Remove the peppers, onion and mushrooms and place in a large bowl on the side.
- Add necessary oil to pan and cook broccoli slaw until tender.
- Remove from pan once cooked and prep the pork chops.
- Cut up pork chops in 1/4" thick pieces and sprinkle salt and pepper on them. Add them to a well oiled pan and cook a few minutes each side until fully cooked.
- Add everything back into the pan and mix together adding your soy sauce and chili paste.
Notes
You can certainly leave out the chili paste if you are not a fan of spicy food. If you are, you can also add more to taste.
