Slow Cooker Sausage Ravioli Soup

Not sure what we are on now of my weekly soup challenge for the winter but they just keep getting better if you ask me. This week I made a soup that is similar to a popular soup most people make but I switched things up a bit.

Sausage Ravioli Soup has plenty of veggies in it without even realizing. This is one of those soups where you can sneak some things in and most people wouldn’t even notice!

Below is how I made this delicious Italian Soup! This is just a guide to get you started, you can add or leave things out if you want too.

Ingredient List:

  • Italian Sausage
  • Crushed Tomatoes
  • Whole Tomatoes
  • Celery
  • Carrots
  • Onions
  • Veggie Broth
  • Ravioli’s
  • Italian Seasoning
  • Oregano
  • Parsley
  • Rosemary
  • Garlic Powder
  • Onion Powder
  • Salt
  • Pepper
  • Ricotta Cheese – Optional Topper

I don’t know if I am crazy when I say all my soups are easy, or if they really are that easy. This soup went together simply but certainly did not lack any flavor. Slow Cooker recipes are great for that, you can toss things in and go about your day. However, you can almost always convert a slow cooker recipe to a stove top recipe too!

How To Load the Slow Cooker

Start loading your slow cooker by browning your Italian sausage. While that is browning, add your vegetables into your crockpot. Such as, crushed tomatoes, whole tomatoes, carrots, celery, onions. Once the sausage is done, scoop that into the slow cooker and pouring in your broth.

Final step before turning the slow cooker on, is adding in your seasonings! Seasonings are really what make a soup taste good! Finding the right seasonings that work for soup is key. For instance, in this soup, Italian Seasoning, Oregano, Rosemary, Salt, Pepper, Garlic Powder and Onion Powder worked really well together.

Stirring all the ingredients together and setting the timer on the slow cooker. Depending on how soon you need the soup, determines how long to cook. You can cook for either 4 hours on high or 8 hours on low.

Final Step Before Serving

30 minutes before the timer goes off (Or set the timer for an extra 30 minutes if you weren’t home), stir in your Ravioli. You can use sausage stuffed, Ricotta stuffed or whatever other kinds you can find. Let that simmer for 30 minutes before serving, allowing the ravioli to cook.

Serve:

This is best served with a dollop of Ricotta Cheese on top and a slice of garlic bread on the side. The Ricotta will cool the soup down a little but will also add the perfect amount of cheese!

Notes:

Why use whole tomatoes? Can’t I use canned tomatoes? Absolutely you can! I have some whole tomatoes froze in my freezer that I like to use up. You could use fresh tomatoes from the store or frozen (like me) but thawed before placing in the slow cooker.

Slow Cooker Sausage Ravioli Soup

An Italian packed soup with creamy Raviolis!

  • 1 Slow Cooker 8 Quart

Ingredients
  

Main Soup Ingredients

  • 1 lbs Italian Sausage Browned
  • 28 oz Crushed Tomatoes
  • 4 Medium Whole Tomatoes
  • 2 Carrot Sticks Diced
  • 2 Celery Sticks Diced
  • 1 Yellow Onion Diced
  • 4 Cups Vegetable Broth
  • 9 oz Ricotta Stuffed Ravioli

Seasonings (Optional)

  • 1 tbsp Italian Seasoning
  • 1 tsp Oregano
  • 1 tsp Rosemary
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • Salt & Pepper To Taste

Optional Topping

  • 1 Spoonful Ricotta Cheese

Instructions
 

  • In a medium pan, brown your Italian Sausage, seasoning as you desire.
  • Dice up your onions, celery and carrots.
  • Into your slow cooker, pour in your can of crushed tomatoes, whole tomatoes, onions, celery, carrots, browned sausage and vegetable broth.
  • Season soup with Italian Seasoning, Oregano, Rosemary, Onion Powder, Garlic Powder, Salt and Pepper.
  • Stir everything together and set timer on crockpot for 4 hours on high or 8 hours on low. Within the final 30 minutes, stir in your Ravioli's.
  • Once Ravioli is cooked, serve in your favorite soup bowl with a dollop of Ricotta Cheese on top.

Notes

If you want even more flavor, you can also add these ingredients. I happened to forget to add these 2 things. 
    • Sliced Mushrooms
    • Chopped Spinach
