I don’t know about you, but my favorite part about summer is the cookouts AND especially the pasta salads. I would be content with just eating pasta salads, if we are being honest here.
I threw this Summertime Pasta Salad together last week for Mark and I and I just loved it so much I knew I had to make it for Fathers Day. I spent Fathers Day with my dad, stepmom, step grandma and my brother and his girlfriend. We went for a nice walk down the tracks and out to a special place our late Grandpa used to enjoy.
By the time we got back to the house, we worked up enough of an appetite to get the grill fired. This is where my pasta salad came in for the day. Every tried it and just absolutely loved it.
This recipe is simple, as most pasta salads are. I love how colorful this one is and its not packed with the perfect amount of flavor. Now you can sub some things with others or even leave some things out. Below I will have pictures of a quick walk through of how I put this recipe together and than at the bottom will be the actual recipe.
What do I need to put this together?
Everything here that you need, you should be able to find it at your local grocery store. I’m an avid Aldi shopper, so that’s where I got all of my ingredients for this, such as. Farfalle noodles, spinach, grape tomatoes, peppers, onion, mayonnaise and parmesan cheese.
How do I make this?
Start with getting your noodles in a pot of water and boiling (pretty typical). While those are cooking, cut up your vegetables, onion, peppers, grape tomatoes and spinach. Put everything in a bowl or the dish you are serving in.




So far we have our onion, peppers – I used mini peppers but you can use a full size pepper as well, grape tomatoes and spinach. I cut everything in fairly small pieces, but that is all preference.

Now that your noodles are done, you can add those into your bowl of veggies and get your dressing ready. This dressing is so easy but not overpowering, its really a great mixture,



This dressing is made out of mayonnaise and grated parmesan. Yep, you read that right. That is ALL this is.
Mix everything together and let it cool in the fridge for maybe a couple of hours, before serving, This is a refreshing pasta salad that tastes the best when nice and cold.

Summertime Pasta Salad

This Summertime Pasta Salad is a refreshing crowd pleaser. This will have every family member asking you for the recipe, quite literally.
Ingredients
- 1/2 white onion
- 5 mini peppers or 2 full size
- 6 grape tomatoes
- Handful of spinach
- 6 oz farfalle noodles
- 1 Cup Mayonnaise
- 1/2 Cup Grated Parmesan
Instructions
- Draw a pot of water and get your noodles boiling.
- Cut up all the vegetables into smaller pieces.
- Mix everything into a bowl / serving dish
- Add mayonnaise and parmesan and give it one last mix around.
- Refrigerate for a couple of hours before serving for best flavor.
Notes
I used mini peppers but you can also use full sized peppers. I just needed to use them up in my fridge.
I also believe this would taste best with "real" mayonnaise, but miracle whip would work also.
